Several decades ago, a co-worker passed this recipe on to me and it’s seriously the best (and easiest) spinach quiche I’ve ever tasted. Even people who claim they don’t care for spinach like it!
Preheat Oven to 350 degrees
1 frozen (thawed) 10 oz box spinach (drained)
8 oz of cheddar cheese (save a little aside to sprinkle on top)
4 oz of cottage cheese
3 eggs
1 T. flour
Small jar of mushrooms (drained)
Mix all ingredients, and pour into an already prepared (formerly frozen) thawed 8″ pie shell.
Cook for 50 minutes
